  1. TOFU GUMBO

  2. 2 c onions, yellow, diced

  3. 2 c vegetable stock

  4. 1 1/2 c italian tomatoes, canned, crushed

  5. 1/2 c carrots, sliced

  6. 4 c okra, sliced

  7. 1/4" thick

  8. 1 c red bell peppers, diced

  9. 1 c green bell peppers, diced

  10. 1 c yellow squash, sliced

  11. 1/2 c corn kernels, fresh

  12. 6 garlic cloves, peeled,sliced

  13. 1 tb cajun spice

  14. 1 t paprika

  15. 1/2 ts funugreek

  16. 1/4 ts red pepper flakes

  17. 10 oz tofu, pressed, cubed

  18. salt and pepper

  19. In a large saucepan, combine the onions vegetable stock, tomatoes,

  20. carrots and celery. Bring to a boil and simmer for 10 minutes.

  21. Add the okra, red and green bell peppers, yellow squash, corn,

  22. garlic, Cajun Spice, paprika, fenugreek and red pepper flakes.

  23. Continue simmering for another 10 mintues. Add the tofu and simmer

  24. an addtional 10 minutes. Season to taste with pepper and salt.

  25. Serve hot.
