  1. 1 egg

  2. 1 1/4 cups ice water

  3. 1/2 teaspoon salt

  4. 1 cup all-purpose flour

  5. 8 fresh wood ear mushrooms, trimmed

  6. 8 snow peas, stringed

  7. 8 2-inch-thick chunks Japanese or regular eggplant

  8. 8 broccoli florets

  9. 8 1/4-inch-thick potato slices Oil for deep frying

  1. For batter, in a large bowl combine egg, ice water and flour, stirring until blended. Set bowl of batter in a larger bowl filled with ice water to keep it cold.

  2. Pour oil 2 inches deep into a Dutch oven or deep skillet; heat to 365 degrees F or until a small test drop of batter bubbles quickly. Dip vegetables one at a time in batter to coat; fry 2 or 3 minutes or until golden brown on all sides, turning once. Drain well on paper towels; serve hot.
