  2. 5 Tbsp. olive oil

  3. 6 ounce bag baby spinach leaves

  4. 1 cup crumbled feta cheese

  5. 3/4 cup sour cream

  6. 1 Tsp. minced garlic

  7. 1/2 Tsp. grated lemon peel

  8. salt and pepper to taste

  1. Heat 1 Tbsp. oil in a large skillet. Add spinach and cook until wilted, stirring, approx.

  2. to 2 minutes. Transfer spinach to fine mesh strainer and press out excess liquid. Chop. Combine 4 Tbsp. oil, feta, sour cream, garlic and lemon peel in food processor and blend until smooth. Stir in spinach, salt and pepper. Serve with crackers, breadsticks, vegetables, etc.
