  1. 6 lbs 2724g / 96oz Fish bones - several varieties

  2. 5 Onions

  3. 4 teaspoons 20ml Salt

  4. 1 1/2 teaspoons 7 1/2ml Pepper

  5. 1 teaspoon 5ml Sugar

  6. 2 teaspoons 10ml Eggs (large)

  7. 3/4 cup 177ml Ice water

  8. 3 tablespoons 45ml Matzo meal

  9. 3 Carrots - sliced

  1. Fillet fish. Combine heads, skin, bones, 4 sliced onions, 1/2 of salt and pepper and carrots in large pot. Cover with water and boil.

  2. Grind fish and onion, add seasonings, water and matzo meal.

  3. Shape into balls and drop into boiling stock. Cover and simmer 1 1/ 2 hours.

  4. Cool and strain.
