  1. 1 small carrot , chopped

  2. 1 celery stalk, chopped

  3. 1 small onion , chopped

  4. 1 Tbsp. oil

  5. 1 lb. pork tenderloin , cubed

  6. 2 tsp. ground ginger

  7. 1 can (14-1/2 oz.) chicken broth

  8. 2 cups instant white rice , uncooked

  9. 1 medium tomato , chopped

  10. 1/4 cup chopped dried apricots

  11. 1/4 cup PLANTERS COCKTAIL Peanuts

  12. 1/4 cup chopped cilantro

  1. COOK and stir carrot, celery and onion in hot oil in large skillet until tender. Add pork and ginger; cook and stir until pork is browned.

  2. ADD chicken broth and 1/2 cup water; bring to boil. Add rice, tomato and apricots. Remove from heat. Cover and let stand 5 min.

  3. SPRINKLE with peanuts and cilantro just before serving.
