  1. 16 fresh dates

  2. 100g Castello blue cheese

  3. 8 thin slices prosciutto, halved lengthways

  4. Extra virgin olive oil, to drizzle

  5. Balsamic glaze, to drizzle

  1. Use a small sharp knife to cut a slit in each date. Remove and discard the stone. Spoon 1 teaspoon of the cheese into each date. Press to enclose the filling.

  2. Wrap a piece of prosciutto around each date. Drizzle with oil and balsamic glaze.
