  1. 1 lb 454g / 16oz Cooked egg noodles

  2. 1 cup 146g / 5.1oz Low-fat cottage cheese

  3. 3 Egg substitutes

  4. 1/4 cup 59ml Fresh orange juice

  5. 2 teaspoons 10ml Vanilla

  6. 1 Tart apple - unpeeled, diced

  7. 1 cup 237ml Boiling water

  8. 1/2 cup 80g / 2.8oz Raisins

  9. 1/2 cup 118ml Canned crushed pineapple in its own juice - drained

  10. 1 teaspoon 5ml Cinnamon

  1. Preheat the oven to 350 degrees.

  2. Combine all ingredients except the noodles and mix well. Add the noodles and pour the mixture into a 2-quart casserole dish.

  3. Bake the casserole for 50 minutes until set. Cut into squares and serve.
