  1. Ginger Ale

  2. 1 gallon

  3. 1 gallon water (for ale)

  4. 2 cups water (for making extract)

  5. 2 ounces fresh ginger root

  6. 2 cups sugar

  7. 1 tablespoon vanilla extract

  8. 1/8 teaspoon yeast

  9. Slice the ginger into thin sections and add them to two cups of

  10. boiling water. Simmer this on very low heat for 20 minutes.

  11. While this is simmering, boil the gallon of water and two cups

  12. of sugar for one minute and set aside. Pour the pan with the ginger

  13. into a blender and blend on high for about one minute. Strain

  14. this extract into the sugar water. With a soup ladle, pour a

  15. few cups of the hot brew through the pulp to extract a bit more

  16. of the ginger flavor. Cool to room temperature. When cool, add

  17. vanilla. Add yeast, stir and let sit for about 30 minutes. Then

  18. bottle and age.

  19. Notes: I recommend that you do not alter the recipe on the

  20. first batch. On subsequent batches you can alter the amount of

  21. ginger, sugar and vanilla to suit your own taste.
