  1. 2 tablespoons olive oil

  2. 4 skinless, bone-in chicken breast halves

  3. 1 cup chopped onion

  4. 5 cloves garlic, peeled and smashed

  5. 2 quarter-size slices peeled ginger, 1/4-inch-thick

  6. 2 bay leaves

  7. 4 boiling potatoes, peeled and cut into large chunks

  8. 1 cup soy sauce

  9. 1/4 cup balsamic vinegar

  10. 1 cup water Pepper to taste

  1. Heat the oil in a large nonreactive pot over medium-high heat. Add the chicken and brown it on all sides. Push the chicken to one side of the pot and sauté the onion and garlic until they're slightly browned, about 5 minutes. Add the ginger, bay leaves, potatoes, soy sauce, vinegar, and water. Stir the mixture and bring it to a boil. Lower the heat, cover, and simmer until the chicken and potatoes are tender, about 45 minutes. Serves 4 to 6.
