  2. NUTMEG MUFFINS

  7. -muffins

  8. 2 c All-purpose flour

  9. 3 tb Granulated sugar

  10. 1 tb Baking powder

  11. 1/2 ts Freshly grated nutmeg, or 3/4 To 1 teaspoon ground nutmeg

  12. 1/4 ts Salt

  13. 2 lg Eggs

  14. 1 c Milk

  15. 1/4 c (1/2 stick) butter, melted

  16. Heat oven to 375 F. Grease muffin cups, or use foil or paper baking cups.

  17. Thoroughly mix flour, sugar, baking powder, nutmeg,

  18. and salt in a large bowl.

  19. Break eggs into another bowl. Whisk in milk and butter

  20. until well blended. Pour over dry ingredients and fold

  21. in with a rubber spatula, just until dry ingredients

  22. are moistened.

  23. 15 to 20 minutes,

  24. or until lightly browned and springy to the touch in

  25. the center. Turn out onto a rack.
