  1. 1 teaspoon baking soda

  2. 1/3 cup warm water

  3. 1 1/2 cups granulated sugar

  4. 1 cup mashed pumpkin

  5. 2 large eggs

  6. 1/2 cup vegetable oil

  7. 1 teaspoon vanilla extract

  8. 1 2/3 cups all-purpose flour

  9. 1 teaspoon salt

  10. 1 teaspoon ground cinnamon

  11. 1/2 cup chopped nuts Icing:

  12. 1/4 cup brown sugar, packed

  13. 2 tablepoons butter

  14. 1 tablespoon milk

  1. Preheat oven to 350°F (175°C). Grease a 9 x 5 x 3-inch loaf pan; set aside. In small bowl, mix baking soda with 1/3 cup water; set aside. In large mixing bowl, combine sugar, pumpkin, eggs, oil and vanilla; mixing well. Combine flour, cinnamon, salt and nuts together. Alternately add to pumpkin mixture with soda-water, starting with the flour mixture. Spoon into prepared loaf pan. Bake for 1 hour or until tested done by inserting wooden pick in center and it comes out clean. Frost loaf while still hot with icing. For Icing: Combine ingredients in a small saucepan. Bring to a boil and cook for 3 minutes. Allow to cool before serving. Wrap tightly to store.
