  1. 1 cup whole-bran cereal

  2. 2/3 cup milk

  3. 1 large ripe banana mashed

  4. 1 egg beaten

  5. 1/4 cup canola oil

  6. 1 1/2 cups flour

  7. 1/2 cup packed brown sugar

  8. 2 1/2 teaspoons baking powder

  9. 1/2 teaspoon salt

  10. 1/2 teaspoon cinnamon

  11. 1/4 teaspoon ground cloves

  1. In a large bowl stir together cereal, milk and banana.

  2. Let stand 2 minutes or until cereal is soft.

  3. Add egg and oil; mix well.

  4. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and cloves.

  5. Add dry ingredients to bran mixture, stirring only until mixture is moistened.

  6. Spoon into twelve greased (or paper-lined) muffin cups.

  7. Bake in a pre-heated 375F oven 25-30 minutes, or until golden brown.

  8. Serve warm. Yield: serves 12
