  1. 3 Egg yolks

  2. 2/3 cup 131g / 4.6oz Sugar

  3. 1 pinch Salt

  4. 2 cups 474ml Grated apples

  5. 1/3 cup 78ml Matzo meal

  6. 2 teaspoons 10ml Grated lemon rind

  7. 1 tablespoon 15ml Slivovitz (plum brandy)

  8. 3 Egg whites - stiffly beaten

  9. 4 tablespoons 60ml Ground pecans

  1. Beat the egg yolks, sugar and salt until thick and lemon colored. Stir in the apples, matzo meal, lemon rind and slivovitz. Fold in the egg whites. Turn into a greased 8-inch spring form pan. Sprinkle the nuts on top.

  2. Bake in a 350 degree oven 35 minutes or until brown and firm. Cool before removing sides of pan.
