  1. Spaghetti Sauce without Meat

  2. 30 lbs tomatoes

  3. 1 cup chopped onions

  4. 5 cloves garlic, minced

  5. 1 cup chopped celery or green pepper

  6. 1 lb fresh mushrooms, sliced

  7. 4-1/2 tsp salt

  8. 2 tbsp oregano

  9. 4 tbsp minced parsley

  10. 2 tsp black pepper

  11. 1/4 cup brown sugar

  12. 1/4 cup vegetable oil

  13. Procedure: Caution: Do not increase the proportion of onions,

  14. peppers, or mushrooms. Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split.

  15. Dip in cold water and slip off skins. Remove cores and quarter

  16. tomatoes.

  17. Boil 20 minutes, uncovered, in large saucepan. Put through food

  18. mill or sieve. Saute onions, garlic, celery or peppers, and mushrooms

  19. (if desired) in vegetable oil until tender.

  20. Combine sauteed vegetables and tomatoes and add remainder of

  21. spices,salt, and sugar.

  22. Bring to a boil. Simmer uncovered, until thick enough for serving.

  23. At this time the initial volume will have been reduced by nearly

  24. one-half. Stir frequently to avoid burning.

  25. Fill jars, leaving 1-inch headspace. Adjust lids and process.
