  1. Instructions Mix the flour, sugar, and salt. Stir in the lemon juice, lemon rind, and beaten egg. Then stir the hot water into this mixture, and cook till thickened. Allow to cool, then pour into a pie tin lined with pastry. Cover with a top crust, and bake according to the pastry instructions until done. .
