  1. 2 C sugar

  2. 1/2 C shortening

  3. 2 egg s

  4. 3 C flour

  5. Pinch salt

  6. 1/2 t soda

  7. 2/3 C buttermilk

  8. 4 mashed banana s

  9. 1/2 t cinnamon

  10. 1 cup nut s

  1. Cream the sugar, shortening and eggs with hand mixer until smooth. Fold in bananas. Measure buttermilk and add soda to measuring cup...mix well to activate...add to wet mixture and stir. Mix flour, salt, cinnamon in separate bowl. Gradually add dry ingredients to wet banana mixture and mix well. Lastly, fold in nuts.

  2. Pour into 2 greased/floured loaf pans. Bake in preheated oven at 350 degrees for 1 hour. To test if done, toothpick inserted in center should come out clean...top center of loaf should spring back when depressed. Cool in pan for about 15 minutes...remove from pan and continue to cool on wire rack. If loaf seems a little dry or overcooked, wrap in foil while still warm and refrigerate.
