  2. APPLE PEAR CAKE

  6. 1/4 c Margarine

  7. 3/4 c Packed light brown sugar

  8. 1 Egg

  9. 1 1/2 ts Vanilla

  10. 2 1/4 c Flour

  11. 1 1/2 ts Baking powder

  12. 1/2 ts Baking soda

  13. 1/2 ts Salt

  14. 2 ts Ground cinnamon

  15. 1 t Ground nutmeg

  16. 2 sm Apples, chopped

  17. 3/4 oz Dried pears

  18. 3/4 c Lowfat buttermilk

  19. 1 tb Confectioners sugar

  20. 3/4 cup regular milk and 1 T vinegar

  21. 1. Preheat the oven to

  22. 375F. Spray

  23. 9 1/2 inch tube pan with nonstick spray.

  24. 2. In a

  25. large bowl, cream the margarine with the brown sugar.

  26. Beat in the egg and vanilla. 3. In a medium bowl,

  27. combine the flour, baking powder, baking soda and salt. Stir to blend. Stir in the cinnamon and nutmeg.

  28. 4. Finely chop the apples, and mince the dried pears.

  29. 5. Alternately add the flour mixture and the milk to

  30. the butter-sugar mixture in three additions, beating

  31. just until the flour is no longer visible. Stir in the

  32. apples and pears. 6. Scrape the batter into the tube

  33. pan and bake for 40 min., or until golden brown and 7. Cool in the pan on a rack for minutes, then unmold the cake and cool completely.

  34. Dust cake with confectioners sugar just before

  35. serving. Note: If you don't have any dried pears, you

  36. can substitute raisins - - - - - - - - - - - - - - - - - -
