  1. 1/2 lb 227g / 8oz Butter - (2 sticks)

  2. 2 cups 396g / 13oz Sugar

  3. 4 Eggs - separated

  4. 3 cups 187g / 6.6oz Flour

  5. 2 teaspoons 10ml Baking powder

  6. 1 cup 237ml Milk - minus

  7. 1 tablespoon

  8. 1/2 teaspoon 2 1/2ml Lemon extract

  9. 1/2 teaspoon 2 1/2ml Vanilla

  1. Using an electric mixer, cream the butter, sugar and egg yolks. Mix the flour and baking powder together and sift into the creamed mixture, adding alternately with the milk. Add the flavorings.

  2. Whip the egg whites to form stiff peaks and gently fold into the batter. Bake in a loaf pan in a preheated oven at 300 degrees for 1 1/4 hours, or until a toothpick stuck into the center of the cake comes out clean.
