  1. A.K.A. Chocolate Yogurt Poundcake

  2. 1 pound (yes POUND) butter, softened

  3. 3 C. sugar

  4. 6 eggs

  5. 3 1/2 C. unbleached white flour

  6. 1 C. cocoa

  7. 1 C plain yogurt

  8. 2 tsp. pure vanilla, almond, or lemon extract

  9. 2 tsp. baking powder

  10. Preheat oven to 350 F.

  11. 10" bundt pan and dust with sifted cocoa. Cream the butter and sugar. Beat the eggs. Add

  12. 2 C. of flour and beat well. Mix in the yogurt and vanilla.

  13. Combine the baking powder, the remaining flour, and the cocoa, and add them to the batter. Beat well. Pour the batter in to the pan.

  14. Bake 1 hour, until the cake pulls slightly away from the sides of the pan, and a knife inserted into the cake turns out clean.

  15. Turn upsidedown onto a plate to cool, leave pan on for 20 minutes to hold cake shape.
