  5. 1/4 c Lite soy sauce

  6. 3 tb Prepared spicy brown mustard

  7. 1 tb Firmly packed brown sugar

  8. 1/2 ts Ground ginger

  9. 1 tb Sesame seeds

  10. 1 Sliced thin medium onion

  11. 1 Cut in half garlic clove

  12. 2 tb Vegetable oil

  13. 4 Skinned boned chicken breast

  14. -halves each about 4 oz

  15. Spinach and pepper saute

  16. -(see recipe for this)

  17. In medium bowl, whisk together soy sauce, mustard,

  18. sugar and ginger; set aside. In large, nonstick

  19. skillet, over high heat, toast sesame seeds until

  20. golden brown, about 4 minutes; remove from pan and set

  21. aside. In same skillet, saute onion and garlic in oil

  22. until soft, about 5 minutes, if desired, discard

  23. garlic clove halves. Add chicken and soy sauce mixture

  24. to skillet. Cover and simmer, turning chicken over

  25. once, until chicken is cooked through. Meanwhile,

  26. prepare spinach and pepper saute. To serve, place

  27. chicken on platter, pour sauce and vegetables over

  28. chicken and sprinkle with sesame seeds. Place sauteed

  29. mixture on platter. Garnish with scallion fan. --
