  1. melted butter for greasing

  2. 8 oz parmesan cheese, finely grated

  3. 2 tbls very finely chopped fresh chives

  1. Preheat oven to 400.

  2. Cover baking sheets with non-stick baking parchment.

  3. Sprinkle cheese in mounds on baking sheets and flatten slightly with a fork to 2 inch rounds.

  4. Bake for 2½ minutes. Sprinkle parmesan rounds with chives and continue baking for 30 seconds.

  5. Remove from oven. Leave on baking sheets for 2 minutes to become crisp. Using a metal palette knife, transfer to a wire rack to cool.
