  1. Cranberry Glaze

  2. 1/4 cup 40g / 1.4oz Brown sugar

  3. 1/2 cup 118ml Mashed cranberry sauce

  4. Turkey Meatloaf

  5. 2 lbs 908g / 32oz Ground turkey

  6. 3/4 cup 177ml Milk

  7. 3/4 cup 109g / 3.8oz Bread crumbs

  8. 3 Eggs - lightly beaten

  9. 1 1/2 teaspoons 7 1/2ml Salt

  10. 1/8 teaspoon 0.6ml Freshly-ground black pepper

  11. 1/4 cup 15g / 1/2oz Diced red onions

  12. 1/2 cup 118ml Chicken broth - enough to moisten

  13. Mixed Beans Almondine

  14. 1/2 lb 227g / 8oz Green beans

  15. 1/2 lb 227g / 8oz Yellow wax beans

  16. 1/4 cup 59ml Walnut oil

  17. Salt - to taste

  18. Freshly-ground black pepper - to taste

  19. 1 cup 93g / 3 1/3oz Toasted slivered almonds

  20. Potato Gratin

  21. 2 Idaho potatoes - peeled, and (large)

  22. 2 Sweet potatoes - peeled, and (large)

  23. Sliced 1/8" thick

  24. 1 cup 237ml Milk

  25. 1 cup 237ml Heavy cream

  26. 1 tablespoon 15ml Salt

  27. 1 tablespoon 15ml Roast garlic puree

  28. 1/4 teaspoon 1 1/3ml Freshly-ground white pepper

  29. 1 Nutmeg

  30. 1 tablespoon 15ml Chopped rosemary

  1. Preheat oven to 350 degrees.

  2. For the glaze, spread the brown sugar over the bottom of a greased loaf pan and spread the cranberry sauce over the sugar.

  3. For the Meatloaf: In a large bowl mix all the remaining ingredients until well incorporated. Form the meat mixture into the loaf pan, laying out over the cranberry glaze.

  4. Bake in 350 degree oven for 1 hour, (be sure to assemble and cook the potato gratin along with the meatloaf, as they have the same cooking times). Turn out the loaf and set aside.

  5. For the Mixed Beans Almondine: Blanch beans in boiling, salted water for 1 minute and then shock in an ice water bath. When ready for dinner, toss the beans with walnut oil, salt and pepper and slivered almonds and place on a baking sheet and place in the oven with the meatloaf for the last 10 minutes before the meatloaf comes out.

  6. For the Potato Gratin: Preheat oven to 400 degrees. Season potatoes with salt and pepper and layer in buttered 2-inch deep baking pan. Bring the rest of the ingredients to a boil and pour over the potatoes while hot, until potatoes are almost covered. Bake at 400 degrees until tender, about one hour.

  7. To assemble the dish, slice the meatloaf into 1 1/2-inch thick slices, and plate with a nice square of the potato gratin, and the beans along side. Serve everything warm.
