  1. 200g couscous

  2. 450ml ( 3/4 pint) hot chicken or vegetable stock

  3. 250g skinless roast chicken, torn into pieces

  4. 100g sweetcorn, thawed if frozen

  5. 2 tomatoes, chopped

  6. cucumber, chopped

  7. Squeeze of lemon juice

  8. Ground black pepper

  1. Put the couscous into a large mixing bowl and cover with the hot stock. Leave for 10-15 mins to swell, then stir with a fork to fluff up the grains.

  2. Add the chicken, sweetcorn, tomatoes and cucumber. Season with a squeeze of lemon juice and some ground black pepper. Cover and chill until ready to serve.
