  1. 1 1/2 tablespoons unsalted butter

  2. 1 small yellow onion; finely chopped

  3. 3 celery ribs; finely chopped

  4. 1 large red bell pepper; seeded and finely chopped

  5. 2 medium russet potatoes; peeled and diced

  6. 2 cups chicken broth

  7. 1 bay leaf

  8. 1/8 teaspoon paprika

  9. 1 teaspoon thyme; dried

  10. 1/4 teaspoon ground black pepper

  11. 2 teaspoons salt; or to taste

  12. 2 cups whole milk

  13. 1 cup half-and-half

  14. 2 cups frozen corn kernels; thawed

  15. 1 lb seafood; white fish, scallops, crab, etc

  1. In a skillet, saute butter with onion, celery and pepper.

  2. Place potatoes in the bottom of the crock pot. Add broth and spices, including the sauted mixture in crockpot. Keep potatoes at the bottom of the crock pot.

  3. Cover and cook on low for 6 hours, until potatoes are tender.

  4. Add milk, half and half, corn and fish.

  5. Cook for one hour, until fish is cook through.

  6. Serves 6.
