  1. 4 large tomatoes

  2. 4 tablespoons extra virgin olive oil

  3. 1 1/2 tablespoons balsamic vinegar

  4. 1 package fresh mozzarella cheese

  5. 16 shredded basil leaves

  6. Salt and pepper to taste

  1. Slice the tomatoes about a quarter inch thick and arrange on a plate.

  2. Slice thin circles of mozzarella cheese and place on top of each tomato. Garnish with a sprig of basil.

  3. Combine the olive oil and balsamic vinegar in a small bowl and mix well. Pour the dressing over the tomatoes. Add salt and pepper to taste. Serve immediately.
