  1. Ingredients :

  2. 1 onion, chopped

  3. a little oil (about 2 teaspoons)

  4. 1 garlic clove, crushed

  5. 1 tablespoon curry paste

  6. 1 1/2 cups red lentils

  7. 4 1/2 cups vegetable stock

  8. 3 tablespoons low fat Greek yogurt (optional - for serving)

  9. chopped fresh coriander (optional - for serving)

  1. Directions :

  2. Soften the onion in a little oil. Add the curry paste and stir well.

  3. Add the stock and lentils and bring to a boil. Simmer for 20-30 minutes until the lentils are well softened.

  4. To serve, mix the coriander into the yogurt, and add a portion to each bowl.

  5. Serves 6.
