  1. Ingredients ( serves 4)

  2. 2 1/2 tbs light olive oil

  3. 2 bunches asparagus, trimmed

  4. 2 tbs red wine vinegar

  5. 1 tsp honey

  6. 1 tsp Dijon mustard

  7. 1 shallot, finely chopped

  8. 1 tbs pink peppercorns, lightly crushed

  1. Heat a char-grill pan on high. Drizzle 2 teaspoons of the oil over the asparagus. Add the asparagus to the char-grill and cook, turning occasionally, for 2 minutes or until bright green and tender crisp. Transfer to a plate.

  2. Place the remaining oil, vinegar, honey, mustard, shallot and peppercorns in a screw-top jar and shake until well combined. Season with salt and black pepper. Drizzle over the asparagus and serve immediately.
