  1. 1 lb 454g / 16oz Beef - chilled and cut into thin pieces

  2. Marinade

  3. 10 Shallots

  4. 2 Garlic

  5. 1/4 Thumb-sized piece turmeric or 1/2 teaspoon 2 1/2ml Turmeric powder

  6. 4 Lemon grass - sliced

  7. 2 Galangal (gingerroot)

  8. 2 tablespoons 30ml Coriander seeds

  9. 2 teaspoons 10ml Cumin

  10. 1 teaspoon 5ml Dark soy sauce

  11. 1 teaspoon 5ml Salt

  12. 5 tablespoons 75ml Sugar

  13. 4 tablespoons 60ml Oil

  1. Combine marinade ingredients in blender and puree to a paste.

  2. Rub paste mixture into the beef. Marinate beef for 1 hour.

  3. Thread seasoned meat on to satay sticks or fine metal skewers.

  4. Grill over charcoal fire or under hot grill. Baste with oil and water mixture to keep beef moist .
