  1. 3 cups all-purpose flour

  2. 3/4 teaspoon salt

  3. 1 teaspoon baking soda

  4. 2 cups sugar

  5. 1 teaspoon ground cinnamon

  6. 1 cup chopped pecans or walnuts

  7. 3 eggs , beaten

  8. 1 cup vegetable oil

  9. 2 cups mashed ripe bananas

  10. 1 (8-ounce) can crushed pineapple , drained

  11. 1/4 cup chopped maraschino cherries

  12. 2 teaspoons vanilla extract

  1. Combine first 5 ingredients, stir in pecans.

  2. Combine remaining ingredients: add to flour mixture, stirring just until dry ingredients are moistened.

  3. Spoon batter into 2 greased and floured 8½ - x 4½ - x 3-inch loaf pans.

  4. Bake at 350ºF for 1 hour 10 minutes or until wooden pick inserted in center comes out clean.

  5. Cool in pans 10 minutes, remove from pans, and let cool on wire racks.

  6. Yield: 2 loaves
