  1. 4 eggwhites

  2. cup (110g) caster sugar

  3. cup (120g) icing sugar, sifted

  1. Preheat oven to 110°C or 90°C fan. Line two baking trays with baking paper. Using an electric beater, beat egg whites until soft peaks form. Gradually add caster sugar, beating constantly, until thick and glossy. Gently fold in icing sugar.

  2. Shape oval meringues, using a spoon to drop mixture onto prepared trays.

  3. Bake for 1½ hours, until crisp and dry. Turn off oven and leave meringues to cool in oven completely. Once cool, store in air-tight containers.

  4. Tip: Serve meringues with cream, ice-cream or fruit. They're also delicious on their own with coffee. If you'd like to flavour the meringues as we have, divide the mixture and stir in 1 teaspoon of either coffee flavouring, vanilla extract or sifted cocoa.
