  1. 1/2 cup whole wheat flour

  2. 1/2 cup white flour

  3. 2 teaspoons baking powder

  4. 1 teaspoon ground cinnamon

  5. 1 cup nonfat milk

  6. 1/4 cup packed light brown sugar

  7. 1 teaspoon vanilla extract

  8. 2 large eggs , lightly beaten

  9. 1 cup mashed steamed sweet potato or canned sweet potato

  10. 1/2 cup bittersweet chocolate chips

  11. non-stick cooking spray

  1. Place both flours, baking power, cinnamon in a large bowl. Whisk until well combined. Make a well in the center and add the milk, sweet potatoes, eggs, brown sugar, vanilla. Whisk until just combined. Stir in the chocolate chips.

  2. Heat a large skillet over high heat. Coat with cooking spray. Using a 1/4 cup measure spoon the batter into the skillet leaving 1 inch between each pancake. Reduce the heat to medium and cook 2 to 3 minutes, or until the edges of the pancake starts to brown. Turn and cook an additional 2 to 3 minutes until the pancake is cook through. Transfer to a plate and serve immediately.
