  1. Vegetable cooking spray

  2. 1 cup 62g / 2 1/5oz Coarsely-chopped onion

  3. 1/2 cup 55g / 1.9oz Sliced celery

  4. 2 Unsalted black beans - (16 oz ea)

  5. 1 Whole tomatoes with green chilies -

  7. 6 oz 170g Cooked turkey breast - diced

  8. 1 tablespoon 15ml Chili seasoning mix

  9. 5 tablespoons 75ml Nonfat sour cream

  10. Sweet red pepper strips

  1. Coat an iron skillet with cooking spray. Place over medium-high heat until hot. Add onion and celery and saute until tender. Let cool slightly then transfer mixture to an electric blender.

  2. Drain beans and reserve liquid. Add half of beans and all of liquid to blender. Process until smooth and return to iron skillet. Add remaining beans, tomatoes and chilies, turkey, and chili seasoning to skillet. Cook over medium heat until hot.

  3. Ladle into bowls, top with sour cream and garnish with pepper strips.

  4. This recipe yields five 1-cup servings.
