  1. Thai Melon Salad

  2. 6 cups melon cubes

  3. 2 cucumbers, halved lengthwise and sliced

  4. 6 tablespoons lime juice or herb vinagre

  5. grated zest of 1 lime

  6. 1 red Thai Chile, diced with seeds

  7. 2 tablespoons chopped fresh cilantro or parsley

  8. Combine melon and cucumber in salad bowl. Mix remaining ingredients

  9. together in small bowl. Pour over fruit, toss well, and serve or chill up to 2 hours.
