  1. 1 (20-ounce) bag refrigerated plain hash brown potatoes

  2. 2 eggs, beaten

  3. 1/3 cup grated onion

  4. 2 garlic cloves, minced

  5. 3 tablespoons flour

  6. 1 teaspoon salt

  7. 2/3 cup peanut oil

  1. The potatoes should measure about 3-1/2 cups. Drain well, then place in a clean kitchen towel and squeeze to drain even more. Place potatoes in large bowl and add remaining ingredients except for oil. Mix well until combined. Heat half of the oil in large saucepan or skillet until a drop of water sizzles immediately when added to the oil. Drop the potato mixture by 1/3 cupfuls into the hot oil. Press down on the patties to make them about 1/2" thick. Cook until browned on first side, about 4-6 minutes, then carefully turn and cook until browned on second side, about another 5 minutes. Remove to paper towels to drain. Repeat with remaining oil and remaining potato mixture. You can keep these hot in a 250 degrees F oven until they are all fried. Serve with applesauce, or with sour cream and chopped green onions. Serves 6-8
