  1. 1 onion , diced

  2. 2 cloves garlic , crushed

  3. 1 birdseye chilli, finely chopped

  4. vegetable oil for frying

  5. 2 potatoes , peeled and diced

  6. 1 carrot , finely chopped

  7. 1/2 cup water

  8. 1/4 cup frozen peas

  9. 1/2 cup coconut milk

  10. salt and pepper

  1. Heat oil in frypan, add onion, garlic and chilli and saute for a couple of minutes until onion's soft. Add vegetable, stir to coat with spice.

  2. Add water, reduce heat to low, cover and cook for 10 minutes, add the peas and cook 3 minutes further. Stir in coconut milk when vegetables are tender.

  3. Serve in a bowl with basmati rice
