  1. 2 large eggs , lightly beaten

  2. 1/2 cup(s) mayonnaise , reduced fat

  3. 1/4 cup(s) red onion , diced

  4. 1/4 cup(s) red bell pepper , diced

  5. 2 scallions , chopped

  6. 3 whole(s) garlic cloves , minced

  7. 1 tablespoon(s) fresh parsely, basil, and dill , chopped

  8. 1 tablespoon(s) fresh lemon juice

  9. 2 teaspoon(s) Old Bay seasoning

  10. 1 teaspoon(s) tabasco sauce

  11. 1/3333333333333 teaspoon(s) salt and pepper

  12. 1 1/2 pound(s) fresh salmon fillets , skinned and deboned, chopped

  13. 2 cup(s) fresh whole wheat bread crumbs

  14. 2 tablespoon(s) olive oil

  1. Preheat oven to 250 degrees. Line a baking sheet with foil and place in the oven to warm.

  2. In a large bowl combine everything except the salmon and breadcrumbs. Mix well.

  3. Gently fold in the salmon and 1/2 the breadcrumbs. Do not over mix. Mixture should be very wet.

  4. Warm 1 tbs. oil in a non-stick skillet. Place the remaining 1/2 breadcrumbs in a bowl. Divide the salmon into 12 portions and form each int a loose cake. Drop it into the breadcrumbs and coat both sides. Shake off excess.

  5. Gently place each cake in the preheated pan. Cook for 2-3 minutes on each side or until lightly browned and cooked through. Remove from the pan and place on the baking sheet in the oven to keep warm.
