  2. 1/2 pound dark or white cooked turkey meat -- cut into large

  3. -- chunk 1/2 pound smoked empire turkey breast or empire

  4. pastrami -- cut into juliennes

  5. 1 pound empire ground turkey

  6. 1 cup chicken or turkey broth

  7. 1 egg

  8. 20 crushed saltine type crackers -- or 1 cup leftover mashed potatoes

  9. 1 cup chopped onion

  10. pepper -- to taste

  11. vegetable cooking spray

  12. *sauce*

  13. 1 can crushed pineapple

  14. 1 tablespoon cornstarch

  15. 1/4 cup brown sugar

  16. 2 tablespoons mustard

  1. In a food processor fitted with the metal blade, pulse the cooked turkey until coarsely chopped. Do not overprocess. Combine the cooked turkey, the julienned turkey, and the ground turkey with broth, egg, crackers, onion and pepper.

  2. Coat a 9 x 5 x 3 inch loaf pan with cooking spray. Press turkey mixture into the pan, and bake at 350 degrees F. for about 1 to 1 1/2 hours, or until meat thermometer reaches 160 degrees F. and meat is no longer pink. Drain juices if any, and unmold turkey loaf onto a platter, top side up.

  3. SAUCEDrain juice from the pineapple, reserve the pineapple itself. Heat the juice over medium high heat and whisk in the cornstarch until well blended. Stir in the brown sugar, mustard, and reserved pineapple. Bring the sauce to a boil, and cook until slightly thickened.

  4. To serve, cut loaf into thick-ish slices, and drizzle with pineapple sauce.
