  1. 1 lb lean lamb loin, trimmed and cut into 3/4-in cubes

  2. 1 1/2 c frozen pearl onion s, thawed

  3. 2 garlic cloves, minced

  4. 1 tbsp olive oil

  5. 1 tbsp lemon juice

  6. 1/2 tsp salt

  7. 2 tsp grated lemon zest

  8. 3 tbsp chopped fresh mint

  1. Spray the grill rack with nonstick spray; preheat the grill to high or prepare a hot fire.

  2. Toss the lamb, onions, garlic, oil, lemon juice, and salt in a large bowl. Thread pieces of lamb and pearl onions alternately on 8 metal skewers. Place on the grill rack and cook, turning frequently, until the lamb is browned and cooked through, 4-5 minutes.

  3. Sprinkle the lemon zest and mint over the kebabs just before serving.
