  1. 1 red pepper sliced

  2. 1 yellow pepper sliced

  3. 1 green pepper sliced

  4. 1 yellow or red onion or shallot saute in olive oil until translucent

  5. 1 cup nicloise black olive s

  6. 1/2 cup olive oil

  7. 1 tab thyme

  8. 1 tab rosemary

  9. 6 peeled tomato es chopped in mixer or a large can of

  10. 1 cup white wine

  11. 6 chicken breast, skinless and boneless

  1. Slice and julienne vgges and suate in olive oil..first peppers, onions, then add peppers and after soft add the 6 peeled tomatoes chopped into cubes with 1 cup white wine. Can add herbs de provence at this time if like along with thyme and rosemary.

  2. Soak chicken in water,put in pan in oven with salt, pepper and herbs de provence at 275-300 degree. When done, take out and add to veggie mix. Simmer about 5 minutes and serve
