  1. 2 tablespoons 30ml Bacon fat

  2. 1 cup 62g / 2 1/5oz Chopped onions

  3. 1/4 cup 27g / 1oz Chopped celery

  4. 2 Bay leaves

  5. 1/2 lb 227g / 8oz Andouille Sausage - cut 1/2" slices, seeNote

  6. 1 tablespoon 15ml Minced garlic

  7. 1 lb 454g / 16oz Navy beans

  8. 8 cups 1896ml Water - to

  9. 10 cups

  10. Tabasco sauce - to taste

  11. Salt - to taste

  12. Freshly-ground black pepper - to taste

  2. In a large heavy saucepan, heat the bacon fat. When the fat is hot, saute the onions and celery for about 5 minutes. Season with salt and pepper. Add the bay leaves. Add the sausage and garlic and continue to saute for 3 minutes. Add the beans and water. Bring the liquid up to a boil and reduce to a simmer. Cook for about 2 hours, or until the beans are soft and creamy. Season with salt, pepper, and Tabasco sauce. Remove the bay leaf.

  3. This recipe yields 8 servings.
