  6. 8 oz Cajun sausage or kielbasa,

  7. -cut in 1 inch slices

  8. 1/3 c Olive oil

  9. 1 lb Okra, stems removed

  10. -(frozen and thawed okay)

  11. 2 c Diced onions

  12. 1 c Coarsely chopped green

  13. 1 c Red bell pepper

  14. 4 Cloves garlic, minced

  15. 5 c Chicken stock

  16. 3 c Canned whole plum tomatoes,

  17. -drained, slightly crushed

  18. 1 t Ground cumin

  19. 1/2 ts Cayenne pepper

  20. 1/2 ts Salt

  21. 1/2 ts Freshly ground pepper

  22. 1 Bay leaf

  23. 1 lb Large shrimp, peeled and -divided

  24. 12 oz Sea scallops

  25. 12 oz Cooked lobster meat

  26. 8 oz Crabmeat

  27. 2 tb Fresh parsley, chopped

  28. 1. In large dutch oven, saute sausage until brown

  29. 2. Add 1/2 of oil to pot. Add okra and cook over

  30. 15 minutes

  31. Add remaining oil and onions, bell peppers, and garlic. Stir and cook 10 minutes.

  32. 3. Add chicken stock, tomatoes, cumin, cayenne, salt

  33. & pepper, and bay leaf. Simmer 30 minutes.

  34. 4. Add cooked sausage, shrimp, and scallops. Simmer

  35. 5 minutes. Add lobster, crabmeat, and parsley, adjust

  36. seasonings, and heat through (2-3 min.)
