  1. 1/2 cup boiling water

  2. 1/3 cup couscous

  3. 1 tablespoon canola oil

  4. 1/2 cup chopped red bell pepper

  5. 1 teaspoon dried thyme

  6. 1 teaspoon curry powder

  7. 1/2 teaspoon cumin

  8. 1/2 teaspoon allspice

  9. 1/2 teaspoon ground gingerroot

  10. 1/2 teaspoon salt

  11. 1/4 teaspoon black pepper

  12. 1/4 teaspoon paprika

  13. 1/4 teaspoon cayenne pepper

  14. 1 pound ground turkey

  1. Preheat oven to 350 degrees F. In a small bowl, combine water and couscous; cover and allow to stand 5 minutes, until couscous has absorbed all of the water.

  2. In a small nonstick skillet, over medium-high heat, add oil; cook red bell pepper, thyme, curry powder, cumin, allspice, gingerroot, salt, black pepper, paprika and cayenne pepper until spices are fragrant, about 1 to 2 minutes. Remove mixture to a bowl, cool to room temperature.

  3. In a medium bowl, combine turkey, bell pepper mixture and couscous. Shape mixture into a round loaf, place in a greased 9-inch pie plate. Bake for about 35 to 45 minutes or until meat thermometer inserted in the center of the loaf reaches 165 degrees F and juices run clear.
