  1. 3 Stalks celery

  2. 3 Medium carrot s, scraped or peeled

  3. 3 Medium potato es, peeled

  4. 1 medium onion

  5. 1 Tbsp olive oil

  6. 1/2 C. Green onion , chopped fine

  7. 1/4 C. chopped parsley

  8. 2 1/2 C. (3 Qt) water or chicken stalk

  9. 1 pinch of thyme

  10. 2 tsp to 3 tsp salt

  11. 6 chicken thighs to

  12. 6 pcs of boneless skinless chicken

  13. 1 C. Cooked noodle s

  1. Diced celery, carrots, potatoes and onion; set aside. Place the onion in a dutch oven with a few tbsp of olive oil. Cook until the onion is soft. Add the remaining ingredients except the noodles. Bring to a boil, reduce the heat and simmer 1 to 1 ½ hours.

  2. Remove the chicken from the soup and cut into bite sized chunks. Add noodles if desired and heat thoroughly before serving.

  3. Serves 8
