  1. 1/2 Red onion - diced

  2. 3 cups 187g / 6.6oz Fresh tomatoes - diced

  3. 2 tablespoons 30ml Chopped cilantro

  4. 4 Chipotle peppers

  5. Hydrated and minced

  6. 1 teaspoon 5ml Salt

  7. 1 teaspoon 5ml Sugar

  8. One lime - juice of

  1. Remove seeds and stems from chipotles. Hydrate the dried chipotles by placing them in enough water to cover.

  2. Bring them to a boil, turn off the heat and let them sit until they cool.

  3. After mincing them finely, add all the ingredients together. Let the salsa sit for at least a half-hour before serving.
