  1. 2 tbsp. butter, melted

  2. 2 tbsp. brown sugar

  3. 2 tbsp. toasted, chopped walnuts

  4. 1 ripe banana, peeled

  5. 1/4 cup all purpose flour

  6. 1/4 tsp. baking powder

  7. 1/8 tsp. ground cardamom

  8. 3 tbsp. sugar

  9. 1 tbsp. butter, softened

  10. 1 large egg

  11. 1/4 tsp. vanilla extract

  1. Preheat oven to 350 degrees. Pour butter into two 1 cup ceramic ramekins. Sprinkle brown sugar and walnuts over. Slice banana and place over walnuts, overlapping and pressing down tightly. Sift together flour and baking powder. Stir in cardamom and salt. Beat together sugar and 1 tbsp. butter. Add egg and vanilla. Beat in flour mixture until just combined. Divide batter between ramekins and place on a baking sheet. Bake about 25 minutes until a toothpick inserted in center comes out clean. Run a knife around edges of cake and invert onto plates.
