  1. 2 tsp canola oil

  2. 1 medium onion, finely chopped

  3. 2 garlic cloves, minced

  4. 2 celery stalks, sliced

  5. 2 large carrots, diced

  6. 2 tbsp curry powder

  7. 1 cup lentils, rinsed and picked through

  8. 2 cups fat free, low sodium chicken broth

  9. 1 14 1/2 ounce can diced tomatoes and juices

  10. 1 8 ounce can no-salt-added tomato sauce

  11. 1 medium sweet potato, cut into 1 inch pieces

  12. 3 cups baby spinach

  13. 2 cooked chicken breasts, cubed

  1. Heat oil on medium heat and sauté onions, garlic, celery and carrots for 6-7 minutes. Sprinkle curry powder and stir well. Add broth, canned tomatoes and tomato sauce. Bring to a boil. Add sweet potato chunks, reduce heat, cover and simmer for 25 minutes, until lentils are tender. Stir in baby spinach and cooked chicken. Cover and simmer for 5 minutes.
