  1. Wild Rice Mango Salad

  2. 1 cup wild rice, uncooked

  3. 2 cups shredded, cooked chicken breast

  4. 1/2 avocado

  5. 1 large, ripe mango

  6. 1 red bell pepper, diced

  7. 1/4 cup thinly sliced scallions

  8. 1/4 cup toasted slivered almonds

  9. 2 tablespoons frozen orange juice concentrate

  10. 1 tablespoon olive oil (optional, or cut in half)

  11. 1/4 teaspoon freshly ground pepper

  12. Cook rice according to package directions. Cool slightly. Meanwhile,

  13. in a large bowl, combine shredded chicken, avocado, mango, red

  14. pepper, scallions and almonds. In a small bowl, combine the orange

  15. juice concentrate, oil, pepper, and a sprinkle of salt to taste.

  16. Toss with the chicken mixture. Add rice. Refrigerate 1-2 hours

  17. before servings.
