  1. clean chicken, for a very spicy chicken marinade over night. Slice onion and pepper place aside. pre heat large skillet add 3 TB of oil, when hot add sugar. The sugar will melt turning deepest brown, add chicken prepared in the teaspoon of Jamaican paste along with your special spices like *cajun or seasoning salts. Cook until done, watch the wonderful color the sugar makes the chicken. drain set aside. BROWNING CHICKEN W/SUGAR WILL CAUSE A LITTLE SMOKE IN KITCHEN.

  2. Place last tablespoon of oil in clean skillet, add sliced onion and green pepper. saute. return chicken to skillet, mix veggies, simmer.

  3. in a medium bowl add one cups of ketcup, teaspoon of jerk paste, 1/2 cup of water. mix ingredients. pour over cooked chicken. add whole Jamaican pepper allow to simmer over chicken for extra flavor. take out whole pepper discard.serve with rice.
