  1. Salmagundi

  2. 2 heads romaine lettuce

  3. 2 breast cooked skinless chicken, (and/or cooked duck, veal, or pork)

  4. 4 boneless cooked chicken thighs

  5. 1 lemon

  6. 2-4 hard-boiled eggs

  7. 3-4 anchovies

  8. flat leaf parsley

  9. pearl onions cooked

  10. green beans blanched and frenched

  11. red and green grapes

  12. pickled red cabbage

  13. watercress

  14. spinach

  15. pickled gherkins

  16. edible flowers

  17. 1 tbs. prepared mustard

  18. 4 tbs. red wine vinegar

  19. 1/2 tsp. salt

  20. 1/2 tsp. freshly ground pepper

  21. 1/2 cup olive oil

  22. Shred the lettuce and lay on a platter. Cut the cold meat in

  23. julienne, slice the lemon thinly, dice or slice the eggs. Arrange

  24. the meat, lemon, and eggs on the lettuce. Add to the platter your

  25. choice of parsley, onions, green beans, grapes, watercress, pickled

  26. cabbage, gherkins, and edible flowers Mix vinaigrette and dress

  27. the salad with it, or serve the dressing on the side.
