  1. One whole cooked chicken

  2. 1 medium sized ripe tomato , chopped

  3. 15 1/4 oz can black bean s, drained

  4. 1 1/2 cups tomato salsa

  5. 1 cup Monterey Jack cheese , shredded

  6. 1/2 tsp ground cumin

  7. salt and pepper to taste

  8. 1 Tbs chili powder

  9. Flour tortillas, quartered

  1. Preheat oven to 350 degrees.

  2. Grease a 9x12 baking dish and set aside.

  3. Remove and discard skin and bones from the chicken, shred the meat and place in a large mixing bowl.

  4. Add the tomato, beans, salsa, and about ¾ of the cheese, as well as the cumin, salt and pepper and chili powder. Stir until well blended and scrape into the prepared baking dish.

  5. Arrange the tortillas on top, coer and bake for 30 minutes.

  6. Uncover, sprinkle with remaining cheese, and bake until the top is golden and crusty, another 10-15 minutes.
